Ingredients
  

  • 8 oz cream cheese softened
  • 6 oz white chocolate chopped
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup graham cracker crumbs
  • 1 cup mixed berries like cranberries and blueberries
  • 1 cup mulled wine
  • 2 tbsp sugar for the fruit
  • 1 tsp cinnamon for the fruit

Method
 

  1. Prepare the cheesecake filling by melting the white chocolate and mixing it with cream cheese.
  2. In a separate bowl, whip the heavy cream until soft peaks form.
  3. Combine the melted white chocolate mixture with the whipped cream and fold gently.
  4. Add in powdered sugar and vanilla extract to enhance sweetness.
  5. Prepare the crust by mixing graham cracker crumbs with melted butter.
  6. Press the graham cracker mixture into the bottom of serving cups or a pie dish.
  7. Spoon the cheesecake filling over the prepared crust and refrigerate.
  8. Prepare the mulled wine fruit by simmering mixed berries with mulled wine and spices.
  9. Allow the mulled wine fruit to cool before spooning over the chilled cheesecake.
  10. Serve chilled, garnished with extra berries or mint leaves, if desired.
