Ingredients
  

  • 1 12-14 pounds whole turkey
  • 1 cup unsalted butter softened
  • 3 tablespoons fresh rosemary chopped
  • 3 tablespoons fresh thyme chopped
  • 2 tablespoons fresh sage chopped
  • 1 tablespoon garlic minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • 2 tablespoons all-purpose flour
  • 1 onion quartered
  • 2 carrots cut into chunks
  • 2 celery stalks cut into chunks

Method
 

  1. Prepare the turkey by thawing if necessary and preheating the oven.
  2. Make the herb butter mixture and season the turkey.
  3. Truss the turkey and place it in a roasting pan.
  4. Roast the turkey, basting every 30 minutes.
  5. Prepare the gravy while the turkey is roasting.
  6. Check the turkey's internal temperature and let it rest.
  7. Carve the turkey and serve with gravy.
